Slow Cooker Chicken Wild Rice Soup

Slow Cooker Chicken Wild Rice Soup Recipe – creamy and filling soup with chicken, wild rice and vegetables. Quick to prepare and cook in your slow cooker!

Ingredients

  • 3/4 cup wild rice uncooked
  • 1 lb chicken breast
  • 3/4 cup chopped carrots
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic minced
  • 3/4 cup chopped celery
  • 4 cups chicken broth
  • 3 cups water
  • 1 teaspoon Italian seasoning
  • 2 Tablespoons butter
  • 1/4 cup cornstarch
  • 2 cups milk or half and half

Instructions

  1. Add chicken, vegetables, rice and seasoning to slow cooker. Add chicken broth and water. Cover and cook for 4 to 5 hours on HIGH setting or 7 to 8 hours on LOW setting.
  2. When chicken is done, remove from slow cooker onto a plate. Shred. Return to slow cooker.
  3. In a saucepan, melt butter. Add milk and cornstarch. Whisk and cook until thickens, about 7 minutes. Add mixture to soup in slow cooker and stir well. Add more water if needed.
  4. Serve soup with crusty bread or croutons. Garnish with fresh chopped parsley.
