Can you use frozen cauliflower in Loaded Cauliflower Casserole?
Yes just follow the instructions for steaming the cauliflower and drain well. Then proceed with the recipe the same as using fresh cauliflower. Generally speaking frozen cauliflower is more economical.
Can you prepare Loaded Cauliflower Casserole in advance?
In a hurry? You can steam the cauliflower ahead of time. As a matter of fact you can prepare the whole dish in advance. Simply cover with plastic wrap and store in the refrigerator. Bring it out of the refrigerator and set it on the counter for about thirty minutes to warm up a bit. Then pop it in the oven twenty-five minutes before serving.
How do you make Loaded Cauliflower Casserole?
Ingredients
1 large head of Cauliflower cut into bite size pieces (6 cups)
6-8 strips of bacon cooked and crumbled
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Cheddar Cheese, Shredded
8 oz container sliced mushrooms (optional)
Directions
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 – 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3tbs chives, 1 cup of cheese, mushrooms and cauliflower, mix well
Place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles.
Bake for 15-20 minutes until cheese is melted. top with remaining chives and serve.
