Honey Lime Grilled Pork Chops

Isn’t summertime the best?  Hot weather, outside all day long, and best of all – grilling!  Seriously I think that is one of the best parts of summer, the lack of dishes when I BBQ supper makes me happy.  Plus, it’s fast and easy and anyone can do it.

YIELD: SERVES 4-6

Ingredients

  • 6-8 pork chops
  • 6 tablespoons olive oil
  • 2 tablespoon honey
  • 2 limes
  • 4 cloves of garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon dried basil

Directions

  1. In a large serving dish, whisk together the olive oil, honey, juice of both limes, garlic, salt and basil. Place the pork chops in the marinade, turning each several times so that they are completely coated. Cover the dish tightly and place in the refrigerator for 4-6 hours to marinate.
  2. Preheat the BBQ to medium heat (about 400 degrees F). Grill the pork chops for 10-15 minutes until done. For chops that are 3/4” or thinner, they will take 4-5 minutes per side, if they’re thicker then 3/4” they will take 7-8 minutes per side. Mine were about 3/4 inches thick and took 10 minutes to cook. Try not to overcook them or they will be dry.
