A healthy breakfast in a jar? You bet! This recipe for chocolate peanut butter overnight oats is perfect for busy mornings. Can easily be made vegan if needed!
Prep Time5 mins
Servings: 1
Ingredients
- 1/2 cup rolled oats, gluten-free if necessary
- 2-3 tsp natural peanut butter or any nut butter
- 1 tsp cocoa powder
- 2 tsp shredded coconut optional
- 1 tsp ground flax meal
- 1 tsp chia seeds optional
- 1 tsp vanilla
- 2 tsp pure maple syrup or honey
- 1/2 cup milk of choice
- Dash of sea salt
Instructions
- Combine all ingredients in small jar or bowl that can be sealed. Stir well.
- Refrigerate overnight. Serving options: serve with a sprinkle of cocoa nibs, dark chocolate chips, or sliced banana.
Notes
I tried a batch with and without the coconut. I preferred the oats with the coconut as it gave it a touch more flavor and sweetness. If you are not a coconut fan, feel free to omit it. **Chia seeds offer protein and fiber. Some people don’t care for the taste. Also, they swell up in the liquid and can often get stuck in your teeth. If you have a big meeting in the morning, you may want to skip them!
