Ingredients:
1 lb ground beef (or turkey)
1 packet taco seasoning
1 can Rotel
2 cups beef broth
1 cup elbow macaroni
Cheese Sauce:
2 tablespoons unsalted butter
2 tablespoons flour
3/4 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
- In a large skillet, brown ground beef over medium high heat. Drain fat. Add in Rotel, taco seasoning packet, beef broth and uncooked macaroni. Bring to a boil then reduce heat. Simmer about 15 minutes or until pasta is tender.
- In a large saucepan, melt butter. Whisk in flour and cook about 5 minutes, whisking often. Whisk in the milk and bring to a boil. Whisk often and cook until mixture thickens. Remove from heat and stir in shredded cheese. Add salt and pepper.
- Pour cheese over cooked beef and macaroni mixture. Stir to combine.
