Ingredients
1/2 cup All-Purpose Flour
1 Large egg (room temperature)
1/2 cup buttermilk (room temperature)
1/4 teaspoon cayenne pepper (more if you like a kick)
Salt and Pepper
30 Saltine crackers
4 cups kettle-cooked potato chips
2 large onions cut into large rings
6 tablespoons vegetable oil
Directions
- Preheat oven to 450 degrees with racks in the upper and lower-middle positions
- In a shallow dish, place 1/4 cup of all purpose flour
- Whisk together the egg and buttermilk, followed by the cayenne pepper and a pinch each of salt and pepper
- Pulse the chips and saltine crackers in a food processor until finely ground and place in separate dish
- Separate onions into rings and coat them in flour, followed by the buttermilk mixture and then into the crumb mixture
- Spread 3 tablespoons of vegetable oil into each rimmed baking sheet and heat 8-10 minutes in the oven until smoking hot
- Spread coated onion rings on pans and bake for about 15 minutes, rotating half way through
- Transfer to paper towel-lined plates and enjoy
