Best Baked Onion Rings Ever




Ingredients




1/2 cup All-Purpose Flour

1 Large egg (room temperature)

1/2 cup buttermilk (room temperature)

1/4 teaspoon cayenne pepper (more if you like a kick)

Salt and Pepper

30 Saltine crackers

4 cups kettle-cooked potato chips

2 large onions cut into large rings

6 tablespoons vegetable oil

Directions

  1. Preheat oven to 450 degrees with racks in the upper and lower-middle positions
  2. In a shallow dish, place 1/4 cup of all purpose flour
  3. Whisk together the egg and buttermilk, followed by the cayenne pepper and a pinch each of salt and pepper
  4. Pulse the chips and saltine crackers in a food processor until finely ground and place in separate dish
  5. Separate onions into rings and coat them in flour, followed by the buttermilk mixture and then into the crumb mixture
  6. Spread 3 tablespoons of vegetable oil into each rimmed baking sheet and heat 8-10 minutes in the oven until smoking hot
  7. Spread coated onion rings on pans and bake for about 15 minutes, rotating half way through
  8. Transfer to paper towel-lined plates and enjoy
