Zucchini and Cheese Casserole

1 – 1 1/2 pounds of zucchini or yellow squash
1 1/2 cups of cheddar cheese (adjust for how much cheese you desire)
4 pieces of bacon, diced
salt and pepper


Slice the squash and place on bottom of casserole dish. Sprinkle with salt and pepper. Put a layer of cheese on top. Place a few diced pieces of bacon partially cooked on top. Repeat layers according to your wish. Bake at 350 F. for 30 minutes. Serves 4
