Cook Time: 4 hours 30 minutes
4 boneless skinless chicken breasts
¾ cup barbecue sauce
¾ cup orange marmalade
2 tablespoons low sodium soy sauce
2 tablespoons orange juice
PInch of salt
Pinch black pepper
Optional: sesame seeds and green onion, garnish
- Dice chicken into 1-inch chunks. Season slow cooker with cooking spray and add chicken to bowl. Sprinkle chicken with salt and black pepper. Cook on LOW for 2 hours. Drain juices and return chicken to slow cooker.
- Whisk barbecue sauce, marmalade, soy sauce, and orange juice. Pour over chicken, cover with lid and continue cooking for 2 hours on LOW, add more time if needed.
- Stir chicken and sauce in slow cooker; sauce will thicken as it cools.
- Serve over top rice, with sesame seeds and thinly sliced green onion as garnish.
