Creamy mashed sweet potatoes made with garlic, feta and dill for ultimate flavor. This side dish frees up your oven and stove since it’s made in the slow cooker.

Cook Time: 4 hours on low
Yield: 4 servings
1 lb sweet potatoes, peeled and cut into quarters (I used 2 medium sized sweet potatoes)
1 cup water
3 garlic cloves, peeled
3/4 tsp kosher salt
1/4 cup sour cream
1/4 cup feta cheese
1/2 tsp dried dill (or you can use 2 tsp fresh dill)
Salt and pepper, to taste
Place sweet potatoes, water, peeled garlic cloves and kosher salt in the slow cooker.
Cover and cook on LOW for about 4 hours or on HIGH for about 2 hours, or until sweet potatoes are very soft.
Drain off any excess water. Mash the sweet potatoes. Stir in the sour cream, feta and dill. Salt and pepper the potatoes to taste. Serve and enjoy!
