Jimmy Dean Breakfast Boat

1/2 Lb Jimmy Dean Roll Sausage (regular or hot)

6 eggs

2 cups shredded cheddar cheese

1 cup sliced mushrooms

3 cups cooked tater tots

salt and pepper to taste

Instructions

1. Begin by cooking your tator tots as directed on the package. While tots are cooking, sauté sausage in a large skillet. Beat eggs, adding cheese and mushrooms, and add salt and pepper to taste. Combine cooked sausage with egg mixture. Line baking dish with cooked tater tots and pour egg and sausage mixture over the tater tots. Bake at 350º for 35 to 40 minutes in a 13 x 9 pan or until egg mixture is firm.
2. Sprinkle with extra cheese if desired.
