Cheesy Crouton & Sausage Bake

serves 4-6


1 lb cooked sausage, sliced

6 cups crusty white bread, cubed

2 cups Gruyere or Swiss cheese, grated

4 eggs

1 cup milk

1/2 cup (1 stick) unsalted butter, melted

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon dried parsley

Kosher salt and fresh ground pepper, to taste


  1. Preheat oven to 350°F and lightly grease an 8×12-inch baking dish. Set aside.
  2. In a large bowl, toss the bread cubes in the butter, garlic powder, parsley, and some salt. Spread out on a baking sheet and bake in the oven until toasted and golden brown, 12-15 minutes. Remove and set aside.
  3. In the large bowl, whisk together the milk, eggs, and mustard until well blended. Add toasted bread cubes and stir gently until coated. Fold in sausage and 1 cup of the cheese.
  4. Pour mixture into prepared baking dish and top with remaining cheese. Bake 30-40 minutes. Let sit 5 minutes before serving. Enjoy!
