Cheeseburger Macaroni


1 lb ground beef (or turkey)
1 packet taco seasoning
1 can Rotel
2 cups beef broth
1 cup elbow macaroni

Cheese Sauce:

2 tablespoons unsalted butter
2 tablespoons flour
3/4 cup milk
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper


  1. In a large skillet, brown ground beef over medium high heat. Drain fat. Add in Rotel, taco seasoning packet, beef broth and uncooked macaroni. Bring to a boil then reduce heat. Simmer about 15 minutes or until pasta is tender.
  2. In a large saucepan, melt butter. Whisk in flour and cook about 5 minutes, whisking often. Whisk in the milk and bring to a boil. Whisk often and cook until mixture thickens. Remove from heat and stir in shredded cheese. Add salt and pepper.
  3. Pour cheese over cooked beef and macaroni mixture. Stir to combine.
