Slow Cooker Sausage, Onion & Peppers

Serves: 8 servings




Ingredients:

1 lb sausage

3 bell peppers, sliced

1 large onion, sliced

4 garlic cloves, minced

1 15 oz can of crushed tomatoes

1 tbsp of dried oregano

⅓ C low-sodium broth

¼ tsp red pepper flakes

¼ tsp salt

¼ tsp pepper

1 tsp ghee or coconut oil (optional)

Directions:

  1. Add broth, crushed tomatoes, garlic, oregano, red pepper flakes, salt & pepper to the bottom of your slow cooker.
  2. Add sliced onion & bell pepper and stir to mix well.
  3. Add sausage on top.
  4. Optional step: add 1 tsp ghee to medium size skillet and brown sausage, a few minutes each side prior to adding to the slow cooker.
  5. Cook low 3-5 hours.
